  1. Preheat oven to 375°F (190°C).
  2. Sauté the diced onion, carrot, and garlic in olive oil until tender.
  3. Add the chopped broccoli and cook until slightly tender.
  4. In a separate bowl, whisk the eggs and season with salt.
  5. In a greased baking dish, arrange a layer of potatoes, followed by the broccoli mixture, cherry tomatoes, and diced peppers.
  6. Pour the whisked eggs over the vegetables and season with the remaining salt.
